Delicious Breakfast Recipes: Burritos, Coffee Cakes, Egg Bakes and More

 

Tony's Breakfast Burrito

1 ten inch flour tortilla
One hash brown pattie
1 sausage link (Brown and Serve)
1 oz grated cheddar cheese
2 large eggs
1 jalepeno chili pepper, diced

In small frying pan (medium heat), brown sausage link and hash browns, then break apart with spatula and mix together. Shove this mixture to one side of pan. Scramble eggs in other side of pan, salt and pepper to taste. When eggs are almost done turn off heat, then mix together with sausage and hash browns. Add jalepeno chile. Microwave tortilla for 10-12 seconds to soften. Scoop mixture into tortilla, wrap up burrito fashion.

 

Blueberry Coffee Cake

1/2 cup butter, softened
3/4 cup sugar
1/2 cup buttermilk
1 egg
2 cups flour
2 teaspoons baking powder
1/2 teaspoon salt
1 1/2 to 2 1/2 cups of fresh blueberries

Topping

2/3 cup firmly packed brown sugar
1/2 cup flour
1 teaspoon cinnamon
6 tablespoons butter
1/2 cup chopped walnuts

Heat oven to 375 degrees. Butter 9" square pan. In large bowl, beat butter and sugar until well blended. Add milk and egg. In small bowl, combine flour, baking powder and salt. Add to butter mixture; stir until just combined. Fold in blueberries. Pour batter into buttered pan.

To prepare topping, combine all ingredients and mix well. Sprinkle evenly over batter. Bake at 375 degrees for 45-50 minutes. Cool 20-30 minutes before serving.

 

Egg and Sausage Breakfast Bake

1 12 ounce package of sausage
1/3 cup chopped onion
2/3 cup chopped bell pepper
10 eggs
1 cup shredded cheddar cheese
1 can of premade biscuits (16.3 ounce package)

Heat oven to 375 degrees. Brown sausage, onion, and bell pepper, drain well. Beat eggs in bowl. Stir in cheese and sausage mixture. Put biscuits into bottom of baking dish. Pour mixture over biscuits. Bake 25 to 30 minutes. or until egg mixture is set and crust is a deep golden brown. Cool for 5 minutes before serving.

 

Irish Snowflake Breakfast Bake

Makes 10 to 12 servings

Preheat oven to 350°. Grease snowflake shaped baking pan or use vegetable cooking spray.

3 cups diced O'Brien potatoes (frozen)
2 cups diced fully cooked ham (or Spam)
2 cups shredded Cheddar cheese
2 cups milk
4 eggs
1 cup Bisquick biscuit mix
1 teaspoon salt
1/2 teaspoon white pepper
1/2 teaspoon dried basil

Mix in large bowl, milk, eggs, biscuit mix, salt, pepper and basil. Beat until well blended.

Layer potatoes, ham and cheese into the snowflake shaped pan and pour the egg mix into the pan.

Bake until center is set and edges are lightly browned, about 50 to 60 minutes. Allow to cool 20 minutes before removing contents from pan.

 

Snowflake Instant Breakfast Medley

1 small banana sliced
1 packet plain, instant oatmeal
1 tablespoon of granola cereal
sprinkle of shredded coconut
2/3 cup water (or per instant cereal instructions)

Mix all ingredients in small microwavable, cereal bowl, or heat water to boiling in sauce pan on stove top.

Mix water with cereal mixture and stir. Yummy.

Make ahead in an air tight container and take to work for a desktop breakfast treat.

Recipe variations:

  • substitute milk for water
  • substitute instant cream of wheat for instant oatmeal
  • substitute instant grits for instant oatmeal
  • substitute (or include) strawberries or blueberries for/with bananas
  • add chopped peanuts or slivered almonds
  • substitute grape nuts for granola
  • add raisins or craisins
  • add flax seed for fiber
  • add a touch of butter for tasty but extra, unneeded calories :-)
